I made these little guys one night after a search for a couple of pieces of post-dinner dark chocolate left me empty-handed. I let them set in the fridge for about 15 minutes and they were totally delicious. I haphazardly threw the ingredients in the bowl so these measurements are only approximates. Use your Nigella Lawson intuition and add more wet or dry ingredients if you need to, until they easily roll into balls. You could also push them into a brownie tin, refrigerate and cut them into squares.
- 1-2 tsp cocoa powder or raw cacao powder
- 3-4 tbsp almond meal
- 3-4 tbsp desiccated coconut plus extra to decorate or coat balls
- 2 tbsp coconut oil
- 1-2 tsp stevia
- 1 tbsp chia seeds
- 1 tbsp almond butter (you can use any nut butter)
- Combine everything in a bowl.
- Mix well.
- Roll into balls.
- Lick fingers.
